Kona Sea Lettuce

Known for its vivid green color and culinary versatility, Sea Lettuce has long been an important limu for Hawaiian culture and cuisine. The Hawaiian name, limu palahalaha, reflects its broad, plate-like shape and its significance as part of the land and sea’s interconnected bounty.

Beloved for its mild, vegetal flavor and delicate, leafy texture, Sea Lettuce is a nutritional powerhouse. It is rich in vitamin A and essential minerals like iodine, calcium, and magnesium. This makes it a flavorful addition to meals and a health-conscious choice. In ancient Hawaii, Sea Lettuce was often sun-dried and salted to preserve it for later use in dishes or as a flavorful snack. Today, its versatility shines in a variety of culinary applications: fresh in salads, blended into smoothies, baked as crispy chips, or incorporated into soups, sauces, and sautés.

Using cold, nutrient-rich deep seawater, we grow our Sea Lettuce outdoors in full tropical sunlight. This collision of cold and heat provides the ideal environment for growth, and ensures sustainable year-round production of the highest quality Sea Lettuce available.

  • Sea lettuce offers a fresh oceanic flavor with subtle sweetness, and a delicate, leafy texture. Its light seaweed essence shines in various dishes. Blanching Ulva brings out its vibrant green color and softens its texture slightly, enhancing its versatility in salads, soups, and more.

When dried, Ulva develops a concentrated, savory flavor profile akin to ocean-inspired jerky. Rehydrating Ulva restores its bright color and texture, making it an excellent addition to a wide array of culinary creations.

  • With up to 33% protein content by dry weight, Sea Lettuce is a remarkable plant-based protein, complemented by vital minerals like sodium, potassium, magnesium, iodine, and manganese. In addition, Sea Lettuce provides important vitamins such as A, C, and B1, along with other trace nutrients that contribute to wellness.
